One of my favorite snacks is Banana Bread! Although it might be difficult to find bananas at this time of the year, I'm including a recipe that I use. It is perfect with a hot cup of tea, coffee or hot cocoa!
3 or 4 Ripe or over-ripe bananas
1/3 cup of melted butter (apx 75-100 g)
1 cup of sugar (apx 200 grams)
1 egg beaten
1 teaspoon of vanilla extract
1 teaspoon of baking soda
A pinch of salt
1 and 1/2 cups of flour (apx 250 g)
Preheat oven to 350 degrees (F) or 175 degrees (C). With a wooden spoon mix the butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg and vanilla. Sprinkle in the baking soda and the salt. Add the flour last, mixing it in slowly. Pour the whole mixture into a buttered loaf pan (the long narrow one). Bake for about an hour but check it at 45 minutes to be sure! After it's been cooked, cool on a rack for about 10 minutes, remove from the pan and slice to serve.
